Cookie Swap




Cute Stuff Inside is hosting a virtual cookie swap. I happened to make some of my favorite cookies to take to work tomorrow and I wanted to share. These may not be fancy cookies, but they are delicious. Your cookie jar will empty out quite quickly!

Pecan Pie Bars






Crust ingredients:
1 Betty Crocker sugar cookie mix
1 egg
1 stick of softened butter

Topping Ingredients:
1 1/2 c chopped pecans
1 c brown sugar
2 TBSP flour
1/2 tsp vanilla
1/2 tsp salt
2 eggs

Preheat oven to 350. Grease a 13 X 9 baking pan. Mix crust ingredients and press into the bottom of the pan. Bake for 20 minutes. Mix topping ingredients. When the crust come out of the oven, immediately spread the topping over the top and return to the oven for another 15 minutes. Cool. Cut into squares and serve.

Kid's Favorite Jumbo 3 Chip cookies (yields 3 dozen)


Dry Ingredients:
4 c flour
1 tsp baking powder
1 tsp baking soda

1 1/2 c butter
1 1 /4 c sugar
1 1/4 c brown sugar
2 eggs
1 TBSP vanilla

1 c milk chocolate chips
1 c semi sweet chocolate chips
1/2 c white chocolate
1/2 c chopped walnuts (optional)

Mix the 3 dry ingredients and set aside. Beat the butter, sugars, eggs, and vanilla in mixer. Slowly add in the dry ingredients. Fold in the chocolate chips. Make large balls of cookie dough. Bake 10 - 12 minutes on ungreased cookie sheets at 350.

Candy Bar Jumbles

1 1/4 c brown sugar
3/4 c margarine
1/2 tsp vanilla
1 egg
1 1/2 c oats
1 1 /2 c flour
1/2 tsp baking soda
1/4 tsp salt

Chocolate mixture:
1/2 c semisweet chocolate chips
14 ounces sweetened condensed milk

5 chopped snicker's bars

Directions:
In a large mixing bowl beat brown sugar and maragarine. Add in vanilla and the egg. On low speed beat in oats, flour, and soda, and salt. Reserve 3/4 a cup for topping crumbles. Press remaining batter in a 13 X 9 ungreased pan.

In a 2 quart saucepan, melt chocolate chips and sweetened condensed milk until smooth. Poor over crust. Sprinkle with chopped snickers and remaining batter.

Bake 32-37 minutes. Cool for 2 hours.




Holly Jolly Snack Mix


9 cups Rice Chex

9 cups Corn Chex

12 ounce bag of holiday M& Ms

4 cups of pretzels

2 c brown sugar

1/2 c light caro syrup

2 sticks of butter

1/2 tsp of baking soda


Directions:

Preheat oven to 250 degrees. Spray a large roasting pan and dump Chex into it. In a heavy sauce pan, melt and mix butter, sugar, and syrup over medium heat on the stovetop until it boils. Remove from heat, stir in the soda. Pour over the Chex and stir with a rubber spatula (scraping the extra liquid from the bottom of the pan. Bake for 45 minutes, stirring every 15. Cool for 5 minutes. Dump the contents onto wax paper. Break apart large clumps. Stir in M& M's and pretzels. Allow to finish cooling. Bag.

Oh boy, your cookies look delish and Buddy is the cutest little helper ever! I am going to have to try that snack mix as M&Ms are my favorite!

OH YUM! I'm going to have to try your CC cookies. Do you use a big scoop to get the nice big size? Of course I didn't read through the whole recipe yet. The pictures got to me first!

those pecan pie bars sound delicious. I think I might try them. I make pecan pie mini muffins, the recipe is on my site. Both of these are a good alternative to regular pecan pie. Your little helper is cute.
